In Hobart, don't choose Tacos in Salamanca. The quality of their food has really dropped and it now attracts a different type of crowd.
As Mexican isn't as mainstream as other foods, you're probably going to have to go looking in the back-streets to find the best and most genuine places.
It's all about the Chimi Changa - I order it every time so that I have a consistent way to judge how good the restaurant is. The meat should be in steak form and not shredded and it should be soft enough that it dissolves in your mouth when you bite into it....yummy. Also, too much tomato is definitely not a good thing when it comes to Chimi Changa.
I'd recommend Amigo's on Chapel Street if your in Melbourne (www.amigos.com.au)
In Sydney, I'd recommend Baja Mexican cantina. Good mexican should have soft tacos and you should feel slightly queasy at the end of it!
